Ingredients
- 3/4 cup peeled, baked, peeled and mashed sweet potatoes (about 1/2 pound raw)
- 1 1/2 teaspoons melted unsalted butter
- 1 medium egg white, lightly beaten
- 3/4 cup 2% milk
- 1/4 cup all-purpose flour
- 1/2 cup whole-wheat flour
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt
Method
- 1. Preheat waffle iron.
- 2. In a large bowl, combine cooled sweet potatoes, butter, egg white, and milk. Beat until blended. Add flour, baking powder and salt. Stir until smooth.
- 3. Spray waffle iron with nonstick vegetable coating.
- 4. Pour 3/4 cup of batter on to center of waffle iron and bake until done.
- Makes 4 (1/2 waffle) servings, each containing approximately:
