- 3 lb. sweet potatoes
- 1 c. chopped red onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped red pepper
- 1/2 c. olive oil
- 2 Tbsp. Dijon mustard
- 1 Tbsp. ketchup
- 1/4 c. vinegar
- 1/4 c. parsley, chopped
- 1 Tbsp. minced garlic
- salt and pepper to taste
Method
- Cook diced sweet potatoes in boiling water until tender.
- Cool on a cookie sheet (never cool in water).
- Mix olive oil, vinegar, ketchup and mustard in a large bowl.
- Add onion, pepper, potatoes and herbs.
- Serve warm or cold.
