Ingredients

  • 2 small or 1 medium size acorn squash
  • 1/2 tsp. salt
  • 2 eggs
  • 1 Tbsp. grated onion
  • 1 c. grated cheese (Cheddar)
  • 2 Tbsp. fine bread crumbs
  • salt and pepper to taste
  • butter

Method

  • Boil whole squash in salted water until almost tender.
  • Remove tops to make cavities for stuffing. Scoop out stringy insides and discard.
  • Drain water that collects.
  • Beat eggs until frothy.
  • Add grated onion, cheese, bread crumbs and salt and pepper. Put bits of butter in each cavity of squash. Fill with stuffing.
  • Place butter and bread crumbs on top of each.
  • Place in a foil-lined pan and bake in a preheated 350° oven for 30 minutes.
  • Yields 4 servings.
