Ingredients
- 2 small or 1 medium size acorn squash
- 1/2 tsp. salt
- 2 eggs
- 1 Tbsp. grated onion
- 1 c. grated cheese (Cheddar)
- 2 Tbsp. fine bread crumbs
- salt and pepper to taste
- butter
Method
- Boil whole squash in salted water until almost tender.
- Remove tops to make cavities for stuffing. Scoop out stringy insides and discard.
- Drain water that collects.
- Beat eggs until frothy.
- Add grated onion, cheese, bread crumbs and salt and pepper. Put bits of butter in each cavity of squash. Fill with stuffing.
- Place butter and bread crumbs on top of each.
- Place in a foil-lined pan and bake in a preheated 350° oven for 30 minutes.
- Yields 4 servings.
