Ingredients
- 1 pound sweet potatoes, peeled and quartered
- 6 eggs, beaten
- 3/4 pound powdered sugar
- 3/4 cup butter, melted
- 1/2 teaspoon grated nutmeg
- 1/4 teaspoon lemon peel
- 1/4 cup brandy
- 1 tablespoon sugar
Method
- Boil sweet potatoes until very tender.
- Rub them, while hot, through a colander.
- Add the eggs, powdered sugar, butter, nutmeg, lemon peel, and brandy.
- Mix thoroughly and place in a medium Dutch Oven.
- Place on a bed of coals.
- Cook for 25 minutes or until firm.
- When done, sprinkle the top with sugar.
