Ingredients

  • 1 pound sweet potatoes, peeled and quartered
  • 6 eggs, beaten
  • 3/4 pound powdered sugar
  • 3/4 cup butter, melted
  • 1/2 teaspoon grated nutmeg
  • 1/4 teaspoon lemon peel
  • 1/4 cup brandy
  • 1 tablespoon sugar

Method

  • Boil sweet potatoes until very tender.
  • Rub them, while hot, through a colander.
  • Add the eggs, powdered sugar, butter, nutmeg, lemon peel, and brandy.
  • Mix thoroughly and place in a medium Dutch Oven.
  • Place on a bed of coals.
  • Cook for 25 minutes or until firm.
  • When done, sprinkle the top with sugar.
