Ingredients

  • 1 tablespoon oil
  • 1 onion, diced
  • 10 button mushrooms, chopped
  • 2 garlic cloves, minced
  • 3 cups water
  • 1 medium sweet potato, peeled and diced
  • 1 cup long grain brown rice
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 12 teaspoon curry powder
  • 12 cup orzo pasta
  • 2 scallions, chopped

Method

  • Heat oil in a saucepan and saute onions, mushrooms and garlic for 5 minutes.
  • Add water, sweet potato, rice and spices.
  • Bring to a simmer.
  • Add the orzo and cover.
  • Reduce heat and cook until all the liquid is absorbed.
  • Remove from heat and fluff with a fork.
  • Stir in scallions and serve hot.
