Ingredients
- 1 9 inch pie crust unbaked
- 2 eggs
- 1 c. sugar
- 1 tsp. salt
- 1/2 tsp. nutmeg
- 1 c. milk
- 2 Tbsp. margarine
- 1 1/2 c. sweet potatoes mashed
Method
- In a pan, boil sweet potatoes until tender.
- Drain.
- Mash sweet potatoes, set aside. In a mixing bowl combine eggs, sugar, salt, nutmeg, milk and margarine, mix well; add potatoes and blend until smooth.
- Pour into unbaked pie crust; bake at 450° for 10 minutes, reduce heat to 350° bake for 30 to 40 minutes.
