- 4 to 5 medium sweet potatoes
- 1/4 c. melted margarine
- 1/4 c. sugar
- 1/2 c. packed brown sugar
- 2 eggs, beaten
- 1 tsp. vanilla extract
- 1/2 c. evaporated milk
- 1/3 c. margarine
- 1/4 c. flour
- 1/2 c. packed brown sugar
- 1/2 c. chopped pecans
Method
- Cook sweet potatoes in boiling water in saucepan until tender. Cool.
- Peel potatoes.
- Combine with melted margarine, sugar, 1/2 cup brown sugar, eggs, vanilla and evaporated milk in mixer bowl. Beat until smooth or process in blender for creamy mixture.
- Spoon into lightly greased 2-quart baking dish.
- Cut 1/3 cup margarine into flour and 1/2 cup brown sugar in small bowl until crumbly. Add pecans; mix well.
- Sprinkle over sweet potatoes.
- Bake at 350° for 30 minutes.
- Makes 10 servings.
