Ingredients

  • 4 to 5 medium sweet potatoes
  • 1/4 c. melted margarine
  • 1/4 c. sugar
  • 1/2 c. packed brown sugar
  • 2 eggs, beaten
  • 1 tsp. vanilla extract
  • 1/2 c. evaporated milk
  • 1/3 c. margarine
  • 1/4 c. flour
  • 1/2 c. packed brown sugar
  • 1/2 c. chopped pecans

Method

  • Cook sweet potatoes in boiling water in saucepan until tender. Cool.
  • Peel potatoes.
  • Combine with melted margarine, sugar, 1/2 cup brown sugar, eggs, vanilla and evaporated milk in mixer bowl. Beat until smooth or process in blender for creamy mixture.
  • Spoon into lightly greased 2-quart baking dish.
  • Cut 1/3 cup margarine into flour and 1/2 cup brown sugar in small bowl until crumbly. Add pecans; mix well.
  • Sprinkle over sweet potatoes.
  • Bake at 350° for 30 minutes.
  • Makes 10 servings.
