Ingredients

  • 4 medium sweet potatoes, cut 1/4-inch thick
  • 2 c. Granny Smith apples, peeled and sliced
  • 3 c. miniature marshmallows
  • 1 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1/2 c. pecans, chopped
  • 2 Tbsp. cornstarch
  • 1/2 c. water
  • 1 Tbsp. butter

Method

  • Peel and slice sweet potatoes. Cook until about half done. In a large buttered baking dish, layer sweet potatoes, apples and marshmallows. Sprinkle with mixture of sugar, cinnamon, salt and pecans. Blend cornstarch and water in a small bowl and pour over layers. Dot with butter and bake, covered, at 350° for 1 hour.
