Ingredients
- 4 medium sweet potatoes, cut 1/4-inch thick
- 2 c. Granny Smith apples, peeled and sliced
- 3 c. miniature marshmallows
- 1 c. sugar
- 1 tsp. cinnamon
- 1 tsp. salt
- 1/2 c. pecans, chopped
- 2 Tbsp. cornstarch
- 1/2 c. water
- 1 Tbsp. butter
Method
- Peel and slice sweet potatoes. Cook until about half done. In a large buttered baking dish, layer sweet potatoes, apples and marshmallows. Sprinkle with mixture of sugar, cinnamon, salt and pecans. Blend cornstarch and water in a small bowl and pour over layers. Dot with butter and bake, covered, at 350° for 1 hour.
