Ingredients
- 1 gal. sliced thin cucumbers
- 1 gal. water
- 3 c. sugar
- 2 Tbsp. ginger
- 1 tsp. celery seed
- 1 tsp. cloves
- 1 c. salt (pickling)
- 1 Tbsp. alum
- 1 qt. vinegar
- 1 Tbsp. salt
- 1 tsp. allspice
- 1 stick cinnamon
Method
- Soak cucumbers in pickling salt and water for 5 to 7 days. Drain and wash cucumbers.
- Cover with water and add alum.
- Boil 10 minutes. Drain and wash.
- Cover with water and add ginger.
- Boil 10 minutes. Drain and wash. Add sugar, vinegar and salt.
- Place celery seed, allspice, cloves and cinnamon in a small bag and add to cucumbers. Boil for 30 minutes. Makes 3 1/2 pints of pickles. Very good!
