Ingredients

  • 1 gal. sliced thin cucumbers
  • 1 gal. water
  • 3 c. sugar
  • 2 Tbsp. ginger
  • 1 tsp. celery seed
  • 1 tsp. cloves
  • 1 c. salt (pickling)
  • 1 Tbsp. alum
  • 1 qt. vinegar
  • 1 Tbsp. salt
  • 1 tsp. allspice
  • 1 stick cinnamon

Method

  • Soak cucumbers in pickling salt and water for 5 to 7 days. Drain and wash cucumbers.
  • Cover with water and add alum.
  • Boil 10 minutes. Drain and wash.
  • Cover with water and add ginger.
  • Boil 10 minutes. Drain and wash. Add sugar, vinegar and salt.
  • Place celery seed, allspice, cloves and cinnamon in a small bag and add to cucumbers. Boil for 30 minutes. Makes 3 1/2 pints of pickles. Very good!
