Ingredients

  • 1 (20 oz.) can pineapple in juice
  • 4 tsp. cornstarch
  • 1/4 c. water
  • 1/2 c. brown sugar
  • 1 tsp. ginger
  • 1/4 c. soy sauce
  • 3 tsp. vinegar
  • 1 lb. pork, chicken or shrimp
  • 2 cloves garlic, minced
  • 1 large onion, chopped
  • 3 tsp. oil
  • other vegetables (optional)

Method

  • Combine juice from pineapple with cornstarch, water, brown sugar, ginger, soy sauce and vinegar in a saucepan.
  • Cook over medium heat until sauce thickens.
  • Set aside.
  • Cut meat into 1-inch cubes, brown meat with garlic and onoin in 3 teaspoon oil. Stir in vegetables and stir-fry.
  • Pour sauce over meat and vegetables and serve over rice.
