- 1 (20 oz.) can pineapple in juice
- 4 tsp. cornstarch
- 1/4 c. water
- 1/2 c. brown sugar
- 1 tsp. ginger
- 1/4 c. soy sauce
- 3 tsp. vinegar
- 1 lb. pork, chicken or shrimp
- 2 cloves garlic, minced
- 1 large onion, chopped
- 3 tsp. oil
- other vegetables (optional)
Method
- Combine juice from pineapple with cornstarch, water, brown sugar, ginger, soy sauce and vinegar in a saucepan.
- Cook over medium heat until sauce thickens.
- Set aside.
- Cut meat into 1-inch cubes, brown meat with garlic and onoin in 3 teaspoon oil. Stir in vegetables and stir-fry.
- Pour sauce over meat and vegetables and serve over rice.
