Ingredients

  • 1 Tbsp. shortening
  • 2 lb. cubed lean stew beef
  • 1/2 tsp. salt
  • 2 c. canned tomatoes
  • 1/3 c. brown sugar
  • 1/3 c. vinegar
  • 1/2 c. finely chopped onion
  • 1/2 bay leaf
  • 1 green pepper, cut into strips

Method

  • Melt shortening in a
  • large skillet.
  • Brown beef on all sides. Add salt, tomatoes,
  • brown
  • sugar,
  • vinegar, onion and bay leaf. Cover skillet, lower
  • heat
  • and
  • let simmer about 2 hours until beef is tender.
  • Add
  • pepper
  • strips;
  • cook for 10 more minutes to blend flavors.
  • Serve with rice.
