Ingredients
- 1 Tbsp. shortening
- 2 lb. cubed lean stew beef
- 1/2 tsp. salt
- 2 c. canned tomatoes
- 1/3 c. brown sugar
- 1/3 c. vinegar
- 1/2 c. finely chopped onion
- 1/2 bay leaf
- 1 green pepper, cut into strips
Method
- Melt shortening in a
- large skillet.
- Brown beef on all sides. Add salt, tomatoes,
- brown
- sugar,
- vinegar, onion and bay leaf. Cover skillet, lower
- heat
- and
- let simmer about 2 hours until beef is tender.
- Add
- pepper
- strips;
- cook for 10 more minutes to blend flavors.
- Serve with rice.
