Ingredients

  • 2 c. hydrated lime
  • 2 gal. water
  • 1 gal. sliced cucumbers
  • 9 c. sugar
  • 2 qt. vinegar
  • 1 tsp. canning salt
  • 1 tsp. celery seed
  • 1 Tbsp. mixed pickling spices
  • 1 tsp. whole allspice

Method

  • Soak sliced cucumbers in lime and water for 24 hours.
  • Drain and soak in fresh water for 3 hours. Drain.
  • Heat and pour over well drained pickles,
  • the sugar, vinegar, salt, celery seed, pickling spices and allspice.
  • Soak 24 hours.
  • Boil all ingredients for 35 minutes. Can, hot, in sterilized jars.
