- 3 cups potatoes, peeled and cubed (Idaho or Yukon gold)
- 1 cup onion, chopped
- 3 lbs pork roast, trimmed
- 4 garlic cloves, minced
- 1 cup water
- 12 cup ketchup
- 3 tablespoons red wine vinegar
- 2 tablespoons light brown sugar
- 2 tablespoons reduced sodium soy sauce
- 1 teaspoon Dijon mustard
- 12 teaspoon ground black pepper
- salt
Method
- Fill the bottom of the crock pot with potatoes and onion.
- Lay the pork on the bed of potatoes and onion.
- Rub garlic onto the pork.
- Mix the remaining ingredients in a separate container and pour mixture over the pork.
- Note: mixture should be thick enough to coat not rinse the pork; add more ketchup to mixture if necessary.
- Cook in crock pot on low for 6 to 8 hours.
