Ingredients

  • 3 cups potatoes, peeled and cubed (Idaho or Yukon gold)
  • 1 cup onion, chopped
  • 3 lbs pork roast, trimmed
  • 4 garlic cloves, minced
  • 1 cup water
  • 12 cup ketchup
  • 3 tablespoons red wine vinegar
  • 2 tablespoons light brown sugar
  • 2 tablespoons reduced sodium soy sauce
  • 1 teaspoon Dijon mustard
  • 12 teaspoon ground black pepper
  • salt

Method

  • Fill the bottom of the crock pot with potatoes and onion.
  • Lay the pork on the bed of potatoes and onion.
  • Rub garlic onto the pork.
  • Mix the remaining ingredients in a separate container and pour mixture over the pork.
  • Note: mixture should be thick enough to coat not rinse the pork; add more ketchup to mixture if necessary.
  • Cook in crock pot on low for 6 to 8 hours.
