- 3/4 lb. cabbage, cut in strips 1/2-inch wide (6 c.)
- 1 c. no salt tomato sauce
- 1 Tbsp. lemon juice
- 1 tsp. apple cider vinegar
- 1 Tbsp. apple juice concentrate
- 2 Tbsp. honey
- 1 tsp. Dijon mustard
- 1/4 c. raisins
- 1 large clove garlic, chopped
- 1/4 tsp. celery seed
- 1 tsp. onion powder
- dash of white pepper (optional)
- 1 1/2 c. cooked Great Northern beans, drained
Method
- In a large saucepan, combine all ingredients except beans. Bring cabbage mixture to a boil while stirring. Cover and simmer 10 minutes.
- Add beans to cabbage and cook 5 minutes to heat through.
- Yields 4 servings.
