Ingredients

  • 3/4 lb. cabbage, cut in strips 1/2-inch wide (6 c.)
  • 1 c. no salt tomato sauce
  • 1 Tbsp. lemon juice
  • 1 tsp. apple cider vinegar
  • 1 Tbsp. apple juice concentrate
  • 2 Tbsp. honey
  • 1 tsp. Dijon mustard
  • 1/4 c. raisins
  • 1 large clove garlic, chopped
  • 1/4 tsp. celery seed
  • 1 tsp. onion powder
  • dash of white pepper (optional)
  • 1 1/2 c. cooked Great Northern beans, drained

Method

  • In a large saucepan, combine all ingredients except beans. Bring cabbage mixture to a boil while stirring. Cover and simmer 10 minutes.
  • Add beans to cabbage and cook 5 minutes to heat through.
  • Yields 4 servings.
