Ingredients
- 6 boneless skinless chicken thighs (1-1/2 lb.) King Sooper's 1 lb For $1.19 thru 02/09
- 3 medium potatoes, cubed
- 1 medium onion, chopped
- 1 medium apple, chopped King Sooper's 1 lb For $0.87 thru 02/09
- 3 Tbsp. curry powder
- 1 tsp. salt
- 1 can (14-1/2 oz.) chicken broth
- 2 cups frozen peas, thawed
- 2 cups MINUTE White Rice, uncooked
Method
- Place chicken in slow cooker; top with potatoes, onions and apples.
- Sprinkle with curry powder and salt.
- Add enough water to broth to measure 2 cups; pour over ingredients in slow cooker.
- Cover with lid.
- Cook on LOW for 7 to 8 hours (or on HIGH for 4 to 5 hours).
- Stir in peas and rice.
- Cover.
- Cook on LOW an additional 20 min.
- or until rice is tender.
