Ingredients

  • 6 boneless skinless chicken thighs (1-1/2 lb.) King Sooper's 1 lb For $1.19 thru 02/09
  • 3 medium potatoes, cubed
  • 1 medium onion, chopped
  • 1 medium apple, chopped King Sooper's 1 lb For $0.87 thru 02/09
  • 3 Tbsp. curry powder
  • 1 tsp. salt
  • 1 can (14-1/2 oz.) chicken broth
  • 2 cups frozen peas, thawed
  • 2 cups MINUTE White Rice, uncooked

Method

  • Place chicken in slow cooker; top with potatoes, onions and apples.
  • Sprinkle with curry powder and salt.
  • Add enough water to broth to measure 2 cups; pour over ingredients in slow cooker.
  • Cover with lid.
  • Cook on LOW for 7 to 8 hours (or on HIGH for 4 to 5 hours).
  • Stir in peas and rice.
  • Cover.
  • Cook on LOW an additional 20 min.
  • or until rice is tender.
