Ingredients

  • 5 boneless, skinless chicken breast halves
  • 2 Tbs. olive or vegetable oil
  • 12 oz. jar prepared salsa (mild or medium)
  • 12 oz. jar prepared Alfredo sauce
  • 1/4 cup shredded or grated parmesan
  • 16 oz. pkg. dried linguini
  • Shaved parmesan for topping, if desired.

Method

  • Heat oil in large skillet. Add chicken cut into bite-sized pieces. Saute over medium-high heat briefly until tan. Add salsa; reduce heat to medium-low; cover and simmer 5-6 minutes until chicken is no long pink inside. Stir in Alfredo and parmesan. Heat through until bubbly, stirring frequently. Meanwhile, cook linguini al dente according to package directions. Toss cooked linguini with chicken mixture. Plate and serve with shaved parmesan if desired.
