Ingredients

  • 3 lb. cream cheese, softened and cut up
  • 1 1/2 c. sugar
  • 3 large eggs
  • 1 1/2 tsp. vanilla
  • 1 c. half and half (I often use whipping cream)
  • grated rind of 1 lemon

Method

  • Blend well in large mixer bowl.
  • Butter a deep 10-inch spring-form pan.
  • Line the bottom with crushed lemon cookies. Pour batter into pan.
  • Place cake pan into a larger pan of hot water, half the depth of the cake pan.
  • Bake at 450° for 15 minutes, then at 350° for 80 minutes or until completely set.
  • Let cool thoroughly before removing from spring-form pan.
