Ingredients
- 3 lb. cream cheese, softened and cut up
- 1 1/2 c. sugar
- 3 large eggs
- 1 1/2 tsp. vanilla
- 1 c. half and half (I often use whipping cream)
- grated rind of 1 lemon
Method
- Blend well in large mixer bowl.
- Butter a deep 10-inch spring-form pan.
- Line the bottom with crushed lemon cookies. Pour batter into pan.
- Place cake pan into a larger pan of hot water, half the depth of the cake pan.
- Bake at 450° for 15 minutes, then at 350° for 80 minutes or until completely set.
- Let cool thoroughly before removing from spring-form pan.
