Ingredients

  • 2 Jalapenos [stemmed and seeded]
  • 1/2 cup Cherry Tomatoes [halved]
  • 1/2 onion [quartered]
  • 1 can Peeled tomatoes whole [28 ounce] {save juice}
  • 2 cloves Garlic
  • 1/2 Lime [juiced]
  • 1/2 cup Cilantro [stems discarded]
  • 1/4 teaspoon Cumin
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

Method

  • 1. Preheat oven to 400.
  • 2. Toss jalapenos, cherry tomatoes and onion with oil. Place on cooking pan roast until brown and slightly charred, about 15 minutes. Let cool.
  • 3. In a blender , combine roasted vegetables, whole peeled tomatoes, garlic, lime juice, cilantro, cumin, salt, and pepper. Pulse to chop and combine, making sure not to over mix. After 4- 8 pulses check it.
  • 4. Season with salt and pepper.
