Ingredients
- 1 (3 oz.) pkg. orange gelatin
- 1/2 tsp. salt
- 1 c. boiling water
- 1 c. cold pineapple juice
- 1 Tbsp. lemon juice
- 1 c. crushed pineapple, drained
- 1 c. grated carrots
Method
- Dissolve gelatin and salt in boiling water.
- Add pineapple juice and lemon juice.
- Refrigerate until mixture begins to jell. Fold in pineapple and carrots.
- Return to refrigerator until fully jelled.
- Cut into squares and serve on a lettuce leaf.
