Ingredients

  • 2 Tbsp. butter
  • 1/2 c. green pepper, diced
  • 1/2 c. onion, diced
  • 1 c. corn
  • 1 c. zucchini, diced
  • 1 c. fresh tomatoes, diced
  • 3/4 c. bread crumbs
  • salt and pepper to taste
  • grated cheese (if desired)

Method

  • Melt butter.
  • Add vegetables and saute until tender (about 10 minutes).
  • Season with salt and pepper.
  • Pour into casserole dish.
  • Sprinkle with bread crumbs and grated cheese.
  • Bake at 350° until cheese is melted and top light golden brown (15 to 20 minutes).
  • May be frozen by pouring into freeze wrap lined casserole dish.
  • Fold and seal freezer paper.
  • Freeze.
  • When frozen, remove from casserole dish and return to freezer immediately.
