Ingredients
- 2 Tbsp. butter
- 1/2 c. green pepper, diced
- 1/2 c. onion, diced
- 1 c. corn
- 1 c. zucchini, diced
- 1 c. fresh tomatoes, diced
- 3/4 c. bread crumbs
- salt and pepper to taste
- grated cheese (if desired)
Method
- Melt butter.
- Add vegetables and saute until tender (about 10 minutes).
- Season with salt and pepper.
- Pour into casserole dish.
- Sprinkle with bread crumbs and grated cheese.
- Bake at 350° until cheese is melted and top light golden brown (15 to 20 minutes).
- May be frozen by pouring into freeze wrap lined casserole dish.
- Fold and seal freezer paper.
- Freeze.
- When frozen, remove from casserole dish and return to freezer immediately.
