Ingredients

  • 2 lb. yellow or zucchini squash
  • 1 large onion, chopped
  • 8 Tbsp. margarine
  • 1/2 pt. cottage cheese
  • 1/2 lb. grated Swiss or Muenster cheese
  • 4 eggs
  • 1/2 tsp. salt

Method

  • Lightly brown onion in 4 tablespoons margarine.
  • Thinly slice squash and add to frying pan.
  • Cook on low heat until squash is soft.
  • Add rest of margarine (4 tablespoons).
  • In a separate bowl, mix cheeses, eggs and salt.
  • Blend into squash mixture.
  • Pour into a large, greased casserole.
  • Bake about one hour in a 350° oven.
