Ingredients
- 2 lb. yellow or zucchini squash
- 1 large onion, chopped
- 8 Tbsp. margarine
- 1/2 pt. cottage cheese
- 1/2 lb. grated Swiss or Muenster cheese
- 4 eggs
- 1/2 tsp. salt
Method
- Lightly brown onion in 4 tablespoons margarine.
- Thinly slice squash and add to frying pan.
- Cook on low heat until squash is soft.
- Add rest of margarine (4 tablespoons).
- In a separate bowl, mix cheeses, eggs and salt.
- Blend into squash mixture.
- Pour into a large, greased casserole.
- Bake about one hour in a 350° oven.
