Ingredients
- 2 small boxes instant sugarless pudding mix
- 3 1/4 c. 2% or skim milk
- 1 c. pumpkin
- 2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/2 tsp. cloves
- 1/2 tsp. ginger
Method
- In mixing bowl, beat pudding mix and milk for 2 minutes.
- Add pumpkin and spices; mix until smooth.
- Pour over baked pie crust. Chill for 1 hour.
- Serves 7 to 8.
- May top with Lite Cool Whip.
