Ingredients

  • 2/3 cup Smart Balance butter spread
  • 2 eggs
  • 1/2 cup skim milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1 cup artificial sweetener
  • 1/2 teaspoon cinnamon
  • 1 1/2 cups old fashioned oats
  • 1 1/2 cups whole wheat flour
  • 1 cup dried cherries
  • 1 cup pecans

Method

  • Preheat oven to 350 degrees F.
  • Grease cookie sheet.
  • Combine butter spread, eggs, sweetner, vanilla, salt and baking powder in mixer. Add milk to ingredients and mix well. Then add oats and flour. Once your dough is complete add cherries and pecans and mix well.
  • Drop by spoonfuls onto a cookie sheet 1-2 inches apart. The dough is a little stiff, so you may want to flatten the cookies slightly. Bake 10.
