Ingredients

  • 6 small zucchini
  • 1 lb. hamburger
  • 3/4 c. beef broth
  • 1 tsp. garlic
  • 1 tsp. basil
  • pepper
  • 1 Tbsp. cornstarch
  • 1 medium tomato, cut up small

Method

  • Squash should be parboiled about 5 minutes before adding other ingredients.
  • Slice zucchini lengthwise, take out seeds (reserve). Brown hamburger, add tomatoes, centers from zucchini, beef broth, seasonings; let cook a few minutes.
  • Thicken with cornstarch.
  • Lay squash flat in a dish; fill with above mixture.
  • Sprinkle grated Mozzarella cheese on top.
  • Bake 5 minutes to melt.
