Ingredients
- 6 small zucchini
- 1 lb. hamburger
- 3/4 c. beef broth
- 1 tsp. garlic
- 1 tsp. basil
- pepper
- 1 Tbsp. cornstarch
- 1 medium tomato, cut up small
Method
- Squash should be parboiled about 5 minutes before adding other ingredients.
- Slice zucchini lengthwise, take out seeds (reserve). Brown hamburger, add tomatoes, centers from zucchini, beef broth, seasonings; let cook a few minutes.
- Thicken with cornstarch.
- Lay squash flat in a dish; fill with above mixture.
- Sprinkle grated Mozzarella cheese on top.
- Bake 5 minutes to melt.
