Ingredients

  • 6 medium zucchini
  • 3 c. soft breadcrumbs (about 6 slices), cubed
  • 1/2 c. grated Parmesan cheese
  • 1 small onion, minced
  • 3 Tbsp. chopped parsley
  • 1 tsp. salt
  • dash of pepper
  • 2 eggs, beaten
  • 1 lb. bulk Italian sausage
  • 4 oz. Mozzarella cheese
  • spaghetti sauce (homemade or store brand)

Method

  • Brown sausage.
  • Wash zucchini; cut off ends.
  • Do not peel. Cook in boiling, salted water for 5 minutes.
  • Halve lengthwise and remove pulp with spoon.
  • Combine pulp, bread crumbs, sausage, cheese, onion, parsley, salt, pepper and eggs.
  • Fill zucchini shells and top with sauce and Mozzarella cheese.
  • Bake at 350° for 30 minutes.
