Ingredients

  • 1 large zucchini
  • 2 Tbsp. melted butter or margarine
  • salt and pepper
  • 1 lb. hamburger
  • 1/2 lb. Italian sausage
  • 1 c. chopped onion
  • 1/2 c. soft bread crumbs (3 slices)
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 Tbsp. dried parsley flakes
  • 1 tsp. oregano
  • 1/4 c. catsup
  • grated Mozzarella cheese

Method

  • Heat oven to 375°.
  • Halve zucchini.
  • Clean out pulp and seeds. Brush zucchini with melted butter.
  • Sprinkle lightly with salt and pepper.
  • Place cut side down in shallow baking pan.
  • Add a little water and cover with foil.
  • Bake about 20 to 25 minutes, until almost tender.
  • While zucchini bakes, brown meats.
  • Pour off all but 2 tablespoons fat.
  • Add onion; cook until tender.
  • Add remainder of ingredients to the meat mixture.
  • Turn zucchini halves hollow side up.
  • Spoon mixture into zucchini.
  • Bake 35 to 40 minutes.
  • When almost done, top with Mozzarella cheese.
