- 1 large zucchini
- 2 Tbsp. melted butter or margarine
- salt and pepper
- 1 lb. hamburger
- 1/2 lb. Italian sausage
- 1 c. chopped onion
- 1/2 c. soft bread crumbs (3 slices)
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. dried parsley flakes
- 1 tsp. oregano
- 1/4 c. catsup
- grated Mozzarella cheese
Method
- Heat oven to 375°.
- Halve zucchini.
- Clean out pulp and seeds. Brush zucchini with melted butter.
- Sprinkle lightly with salt and pepper.
- Place cut side down in shallow baking pan.
- Add a little water and cover with foil.
- Bake about 20 to 25 minutes, until almost tender.
- While zucchini bakes, brown meats.
- Pour off all but 2 tablespoons fat.
- Add onion; cook until tender.
- Add remainder of ingredients to the meat mixture.
- Turn zucchini halves hollow side up.
- Spoon mixture into zucchini.
- Bake 35 to 40 minutes.
- When almost done, top with Mozzarella cheese.
