Ingredients
- 1/3 c. black olives
- 4 slices bacon
- 2 Tbsp. chopped onion
- 4 hard-boiled eggs, diced
- 1 c. celery, chopped fine
- 1/3 c. mayonnaise
- 1/2 tsp. salt
- dash of pepper
- 6 ripe tomatoes
- lettuce
Method
- Cut olives into large pieces.
- Cut bacon into 1/4-inch strips and cook slowly until crisp.
- When bacon is half done, add onion and cook until soft.
- Drain off fat.
- Combine bacon and onion with eggs, celery and olives.
- Add mayonnaise.
- Mix.
- Stuff tomatoes and serve on lettuce.
