Ingredients

  • 1/3 c. black olives
  • 4 slices bacon
  • 2 Tbsp. chopped onion
  • 4 hard-boiled eggs, diced
  • 1 c. celery, chopped fine
  • 1/3 c. mayonnaise
  • 1/2 tsp. salt
  • dash of pepper
  • 6 ripe tomatoes
  • lettuce

Method

  • Cut olives into large pieces.
  • Cut bacon into 1/4-inch strips and cook slowly until crisp.
  • When bacon is half done, add onion and cook until soft.
  • Drain off fat.
  • Combine bacon and onion with eggs, celery and olives.
  • Add mayonnaise.
  • Mix.
  • Stuff tomatoes and serve on lettuce.
