Ingredients

  • 1 1/2 c. milk
  • 1 c. soft bread crumbs
  • 1 can pimento, chopped
  • 1 Tbsp. minced parsley
  • 1 1/2 Tbsp. minced onion
  • 3/8 tsp. salt
  • 1/8 tsp. pepper
  • dash of paprika
  • dash of garlic salt
  • 3 eggs, well beaten
  • 1 1/2 c. grated Cheddar or processed American cheese
  • 1 c. drained, cooked vegetables (such as carrots, peas, cauliflower, string beans and leftovers)

Method

  • Heat milk; pour over bread crumbs.
  • Add pimento, parsley, onion, grated cheese and seasonings, then add eggs.
  • Put the vegetables in a greased or oiled 1 1/2-quart casserole; pour milk and cheese mixture over them.
  • Set in pan of warm water.
  • Bake in moderate oven at 350° for 1 hour, or until firm.
  • Serves 6.
