Ingredients
- 1 1/2 c. milk
- 1 c. soft bread crumbs
- 1 can pimento, chopped
- 1 Tbsp. minced parsley
- 1 1/2 Tbsp. minced onion
- 3/8 tsp. salt
- 1/8 tsp. pepper
- dash of paprika
- dash of garlic salt
- 3 eggs, well beaten
- 1 1/2 c. grated Cheddar or processed American cheese
- 1 c. drained, cooked vegetables (such as carrots, peas, cauliflower, string beans and leftovers)
Method
- Heat milk; pour over bread crumbs.
- Add pimento, parsley, onion, grated cheese and seasonings, then add eggs.
- Put the vegetables in a greased or oiled 1 1/2-quart casserole; pour milk and cheese mixture over them.
- Set in pan of warm water.
- Bake in moderate oven at 350° for 1 hour, or until firm.
- Serves 6.
