Ingredients
- 4 sweet potatoes
- 8 strips bacon, diced
- 1 cup diced onion
- 1/2 cup sour cream
- 2 Tbsp. butter, softened
- 1 tsp. salt
- 1 tsp. ground nutmeg
- 1/3 cup chopped pecans
Method
- Wash and bake sweet potatoes at 375 degree oven for 50 minutes or until tender.
- Let potatoes cool.
- While potatoes are baking dice and brown bacon.
- When bacon is brown, add onions and cook tender.
- Remove to strainer and strain bacon grease.
- Press mixture gently.
- Lay potatoes on side.
- Slice 1/2 inch off top. Remove pulp from top and inside potato, leaving 1/4 inch thick wall.
- Combine pulp, sour cream and butter.
- Mash with potato masher.
- Add bacon, onion, salt and nutmeg.
- Stuff potato. Sprinkle with pecans.
- Heat oven to 350 degrees.
- Bake 20 - 25 minutes.
