Ingredients

  • 4 sweet potatoes
  • 8 strips bacon, diced
  • 1 cup diced onion
  • 1/2 cup sour cream
  • 2 Tbsp. butter, softened
  • 1 tsp. salt
  • 1 tsp. ground nutmeg
  • 1/3 cup chopped pecans

Method

  • Wash and bake sweet potatoes at 375 degree oven for 50 minutes or until tender.
  • Let potatoes cool.
  • While potatoes are baking dice and brown bacon.
  • When bacon is brown, add onions and cook tender.
  • Remove to strainer and strain bacon grease.
  • Press mixture gently.
  • Lay potatoes on side.
  • Slice 1/2 inch off top. Remove pulp from top and inside potato, leaving 1/4 inch thick wall.
  • Combine pulp, sour cream and butter.
  • Mash with potato masher.
  • Add bacon, onion, salt and nutmeg.
  • Stuff potato. Sprinkle with pecans.
  • Heat oven to 350 degrees.
  • Bake 20 - 25 minutes.
