- 12 large mushrooms
- 1 Tbsp. butter
- 1/4 c. diced pepperoni
- 2 Tbsp. diced green pepper
- 1 clove garlic, minced
- 1/4 c. finely crushed cracker crumbs
- 4 tsp. grated Parmesan cheese
- 2 tsp. snipped parsley
- 1/4 tsp. seasoned salt
- 1/8 tsp. oregano
- 1/8 tsp. pepper
Method
- Wash mushrooms.
- Gently remove stems and finely chop.
- Drain caps.
- In a 1-quart bowl combine butter, chopped stems, pepperoni, green pepper and garlic.
- Cook on High 2 minutes.
- Stir in crumbs, cheese, parsley, salt, oregano and pepper; mix well.
- Mound mixture in mushroom caps.
- Place in micro-safe dish.
- Cover and cook on Medium for 4 minutes or until hot.
