Ingredients

  • 12 large mushrooms
  • 1 Tbsp. butter
  • 1/4 c. diced pepperoni
  • 2 Tbsp. diced green pepper
  • 1 clove garlic, minced
  • 1/4 c. finely crushed cracker crumbs
  • 4 tsp. grated Parmesan cheese
  • 2 tsp. snipped parsley
  • 1/4 tsp. seasoned salt
  • 1/8 tsp. oregano
  • 1/8 tsp. pepper

Method

  • Wash mushrooms.
  • Gently remove stems and finely chop.
  • Drain caps.
  • In a 1-quart bowl combine butter, chopped stems, pepperoni, green pepper and garlic.
  • Cook on High 2 minutes.
  • Stir in crumbs, cheese, parsley, salt, oregano and pepper; mix well.
  • Mound mixture in mushroom caps.
  • Place in micro-safe dish.
  • Cover and cook on Medium for 4 minutes or until hot.
