Ingredients

  • 24 large mushrooms
  • lemon juice
  • 1 1/2 Tbsp. lemon juice
  • 1 1/2 Tbsp. butter
  • 1 1/2 Tbsp. minced onion
  • 3/4 tsp. oregano
  • 1/4 tsp. salt
  • 4 oz. shredded Swiss cheese
  • 2 garlic toes, minced
  • paprika

Method

  • Remove stems from mushrooms.
  • Dip caps in lemon juice.
  • Chop stems.
  • In a small saucepan, place butter, 1 1/2 tablespoons lemon juice, onion, garlic, oregano, salt and mushroom stems.
  • Cook 2 to 3 minutes.
  • Add shredded Swiss cheese.
  • Fill mushroom caps with mixture.
  • Place in baking dish.
  • Sprinkle with paprika.
  • Bake in preheated 400° oven for 10 to 15 minutes.
