Ingredients

  • 1 stick butter 1/4 lb.
  • 6 rock cornish hens approximately 1 lb. 2 oz. each
  • 3 cups cooked white rice or Minute Rice, cooked to =
  • 16 ounces mushroom pieces
  • 1 1/2 teaspoons poultry seasoning
  • 1/4 cup celery minced
  • onion 1 sm., minced
  • 2 eggs med. sized

Method

  • Thaw hens. Remove giblets and rinse hens in COLD water. Cover and put back in refrigerator. (Feed the giblets to a neighbor's cat or cook them.)
  • Cook rice to make 3 cups and cool. Add drained mushroom pieces to cooled rice. Add eggs, celery, onion, and poultry seasoning. Mix well.
  • Stuff each hen and close with small skewers (like a turkey).
  • Bake at 350 degrees for 1 1/2 to 2 hours in a covered, shallow pan with 1/4 stick melted butter.
