Ingredients

  • 2 c. cottage cheese
  • 3/4 c. mayonnaise
  • 8 Spanish olives, finely chopped
  • 1 Tbsp. juice from the Spanish olives jar
  • 4 to 6 celery sticks, washed (of course)

Method

  • Mix cottage cheese, mayonnaise and olive juice together; add finely chopped olives.
  • Cut celery stalks into 4-inch pieces. Using a spoon, "stuff" mixture into celery; if you choose to be more complicated, you can use a pastry bag for stuffing.
  • Remember to serve with napkins!
  • Serves 12 to 18 people, depending on length of your celery stalks.
