- 1/2 lb. mushrooms, thinly sliced
- 1 stick butter
- 3 Tbsp. flour
- 2 garlic cloves, minced
- 3 Tbsp. finely chopped green onions
- 3 Tbsp. minced parsley
- dash of cayenne
- 1 tsp. salt
- 1/3 c. dry sherry
- 4 doz. small oysters, drained
- 1/2 c. Italian bread crumbs
- dash of Kitchen Bouquet
Method
- Saute mushrooms in 2 tablespoons butter and set aside.
- In heavy skillet or pan, melt 4 tablespoons butter; add flour and cook on low heat, stirring constantly until light brown.
- Add garlic, green onions, parsley and Kitchen Bouquet and cook 5 minutes.
- Add cayenne and salt; blend in sherry.
- Add oysters and mushrooms and simmer 5 minutes.
