Ingredients

  • 1/2 lb. mushrooms, thinly sliced
  • 1 stick butter
  • 3 Tbsp. flour
  • 2 garlic cloves, minced
  • 3 Tbsp. finely chopped green onions
  • 3 Tbsp. minced parsley
  • dash of cayenne
  • 1 tsp. salt
  • 1/3 c. dry sherry
  • 4 doz. small oysters, drained
  • 1/2 c. Italian bread crumbs
  • dash of Kitchen Bouquet

Method

  • Saute mushrooms in 2 tablespoons butter and set aside.
  • In heavy skillet or pan, melt 4 tablespoons butter; add flour and cook on low heat, stirring constantly until light brown.
  • Add garlic, green onions, parsley and Kitchen Bouquet and cook 5 minutes.
  • Add cayenne and salt; blend in sherry.
  • Add oysters and mushrooms and simmer 5 minutes.
