Ingredients
- 8 medium size sweet potatoes
- 1/4 c. orange juice
- 3 Tbsp. butter or margarine, melted
- 1/4 tsp. ground cinnamon
- 1/4 tsp. salt
- 1 tsp. brown sugar
Method
- Heat oven to 350°.
- Rinse and dry sweet potatoes well.
- Place potatoes on baking sheet; bake for 55 to 60 minutes, or until tender.
- Do not turn off oven.
- Cool potatoes until easy to handle.
- When potatoes are cool, cut in half lengthwise.
- With spoon, scoop out pulp from 8 potato halves into large bowl and discard skins.
- Scoop out pulp from remaining 8 potato halves, leaving 1/4 inch potato intact on skin to make shells.
- Place pulp in same large bowl; return potato shells to same baking sheet.
