Ingredients

  • 8 medium size sweet potatoes
  • 1/4 c. orange juice
  • 3 Tbsp. butter or margarine, melted
  • 1/4 tsp. ground cinnamon
  • 1/4 tsp. salt
  • 1 tsp. brown sugar

Method

  • Heat oven to 350°.
  • Rinse and dry sweet potatoes well.
  • Place potatoes on baking sheet; bake for 55 to 60 minutes, or until tender.
  • Do not turn off oven.
  • Cool potatoes until easy to handle.
  • When potatoes are cool, cut in half lengthwise.
  • With spoon, scoop out pulp from 8 potato halves into large bowl and discard skins.
  • Scoop out pulp from remaining 8 potato halves, leaving 1/4 inch potato intact on skin to make shells.
  • Place pulp in same large bowl; return potato shells to same baking sheet.
