Ingredients
- 1 pt. strawberries, washed and hulled
- 1/2 c. hot water
- 2 envelopes diabetic strawberry gelatin
- 1 1/4 c. crushed ice
Method
- Wash and hull strawberries.
- Into an electric blender, pour hot water, dry gelatin and 1 cup of the strawberries.
- Cover; blend 30 seconds.
- Add crushed ice; blend 20 seconds longer.
- Add remaining strawberries.
- Blend about 3 seconds.
- Pour into chilled serving bowl.
- Chil 1 hour or until partially set.
- Spoon into serving dishes and garnish with mint, if desired.
