Ingredients

  • 1 pt. strawberries, washed and hulled
  • 1/2 c. hot water
  • 2 envelopes diabetic strawberry gelatin
  • 1 1/4 c. crushed ice

Method

  • Wash and hull strawberries.
  • Into an electric blender, pour hot water, dry gelatin and 1 cup of the strawberries.
  • Cover; blend 30 seconds.
  • Add crushed ice; blend 20 seconds longer.
  • Add remaining strawberries.
  • Blend about 3 seconds.
  • Pour into chilled serving bowl.
  • Chil 1 hour or until partially set.
  • Spoon into serving dishes and garnish with mint, if desired.
