Ingredients
- 1 Tbsp. unflavored gelatin
- 1/2 c. unsweetened apple juice
- 2 tsp. lemon juice
- 1 c. unsweetened pureed strawberries
- 2 egg whites
- 1 c. low-calorie whipped topping
Method
- Sprinkle gelatin on cold apple juice; let soften.
- Heat apple juice and gelatin until gelatin dissolves.
- Remove from heat and add pureed strawberries and lemon juice; mix well.
- Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
- Beat egg whites until stiff, but not dry.
- Fold egg whites into gelatin mixture.
- Next, fold whipped topping into mixture. Divide evenly into custard cups or parfait glasses.
- Refrigerate at least 3 to 4 hours.
- Yields 5 servings.
