Ingredients

  • 1 Tbsp. unflavored gelatin
  • 1/2 c. unsweetened apple juice
  • 2 tsp. lemon juice
  • 1 c. unsweetened pureed strawberries
  • 2 egg whites
  • 1 c. low-calorie whipped topping

Method

  • Sprinkle gelatin on cold apple juice; let soften.
  • Heat apple juice and gelatin until gelatin dissolves.
  • Remove from heat and add pureed strawberries and lemon juice; mix well.
  • Chill, stirring occasionally, until mixture mounds slightly when dropped from a spoon.
  • Beat egg whites until stiff, but not dry.
  • Fold egg whites into gelatin mixture.
  • Next, fold whipped topping into mixture. Divide evenly into custard cups or parfait glasses.
  • Refrigerate at least 3 to 4 hours.
  • Yields 5 servings.
