Ingredients
- 1 baked 8-inch pie shell
- 3/4 c. water
- 3 Tbsp. cornstarch
- 1 c. sugar
- 1 tsp. lemon juice
- 1 c. whipped cream
- 1 quart fresh strawberries
Method
- Line pie shell with all except 1 cup of berries (standing tip side up looks pretty).
- Simmer 1 cup of berries in water 3 to 4 minutes.
- Combine dry ingredients and add slowly to cooked berries.
- Cook again until thickened and clear.
- Remove from heat. Add lemon juice.
- Pour over berries in pie shell.
- Chill.
- Serve with whipped cream.
