Ingredients

  • 4 c. strawberries
  • 1 1/2 c. tofu (silken; liquid)
  • juice of 1/2 lemon
  • 2 Tbsp. soft brown sugar
  • few drops vanilla extract

Method

  • Wash and hull strawberries (resume a few for garnish).
  • Drain the tofu and blend it in a blender together with the strawberries, lemon juice and sugar.
  • Blend until smooth.
  • Add vanilla to taste and mix well.
  • Divide the mixture into 4 to 6 individual serving dishes and decorate with the reserved strawberries; chill.
