Ingredients

  • 3 c. all-purpose flour
  • 2 c. sugar
  • 1 tsp. baking soda
  • 1 1/2 tsp. cinnamon
  • 1 (3 oz.) pkg. strawberry gelatin
  • 3 eggs
  • 1 (16 oz.) pkg. frozen strawberries, thawed
  • 1 banana, mashed
  • 3/4 c. vegetable oil
  • 2 tsp. nonstick cooking spray (to coat pans)

Method

  • Preheat oven to 400°.
  • Combine dry ingredients in a large bowl.
  • Make a well in the center.
  • In a separate small bowl, mix remaining 5 ingredients together.
  • Pour fruit mixture into well and gently stir by hand.
  • Coat 2 nonstick
  • 9 x 5-inch bread pans with cooking spray and pour mixture into pans.
  • Bake for 1 hour or until toothpick comes out clean.
  • Cool before slicing.
