Ingredients
- 1 to 1 1/2 lb. chicken breast
- 1/2 head cabbage
- 8 oz. mushrooms
- 3 medium carrots
- 1 small onion
- 1 small green pepper (optional)
- 1 Tbsp. canola oil
- cumin
- curry
- pepper
- soy sauce
Method
- Cut or chop vegetables to suitable size.
- Cut boneless, skinless chicken breast into 1/2 to 1-inch cubes.
- Heat oil on high.
- Stir-fry chicken; add vegetables.
- Fry for 1 to 2 minutes, stirring constantly.
- Add 2 tablespoons soy sauce and simmer on medium heat.
- While simmering, season with cumin, curry and pepper to taste.
- Simmer until desired crispness or tenderness of vegetables.
- Add more soy sauce as necessary.
