Ingredients

  • 1 to 1 1/2 lb. chicken breast
  • 1/2 head cabbage
  • 8 oz. mushrooms
  • 3 medium carrots
  • 1 small onion
  • 1 small green pepper (optional)
  • 1 Tbsp. canola oil
  • cumin
  • curry
  • pepper
  • soy sauce

Method

  • Cut or chop vegetables to suitable size.
  • Cut boneless, skinless chicken breast into 1/2 to 1-inch cubes.
  • Heat oil on high.
  • Stir-fry chicken; add vegetables.
  • Fry for 1 to 2 minutes, stirring constantly.
  • Add 2 tablespoons soy sauce and simmer on medium heat.
  • While simmering, season with cumin, curry and pepper to taste.
  • Simmer until desired crispness or tenderness of vegetables.
  • Add more soy sauce as necessary.
