Ingredients

  • 2 baskets of white button mushrooms
  • 6 tbsp minced garlic
  • 1 tsp course salt
  • 1/8 tsp freshly ground black pepper
  • 1/4 cup pine nuts chopped
  • 1/2 cup panko bread crumbs
  • 6 tbsp olive oil.

Method

  • remove stems from mushroom caps and set aside. place caps, open side up in pyrex baking dish. preheat oven to 350. chop mushroom stems. heat olive oil and saute garlic and salt until just starting to become golden. add chopped stems and saute for 2 -3 minutes. add chopped pine nuts and mix. add panko bread crumbs and saute for 2 minutes. season with black pepper. let mixture cool for a few minutes, then fill mushroom caps with mixture, heaping it in to the caps. cover pyrex dish with foil and bake for 15 minutes. remove foil and bake for additional 10 minutes until tops are crispy.
