Ingredients
- 1 fryer, cut in 8 pieces
- 1 large green pepper, in strips
- 1 c. mushrooms, halved
- 1 large yellow onion, thinly sliced
- 1/4 c. red wine
- 2 Tbsp. oil
- 4 large cloves garlic, smashed
- 1 Tbsp. dried oregano ro 3 Tbsp. fresh
- 1 Tbsp. sweet basil or 3 Tbsp. fresh
- 1 Tbsp. dried thyme or 3 Tbsp. fresh
- 1 qt. jar whole tomatoes
Method
- Wash, cut and dry chicken; brown in oil.
- Place in 3-quart casserole and add other ingredients.
- Cook, uncovered, 1 1/2 to 2 hours at 350° or until chicken becomes loosened from bone.
- Salt and pepper to taste.
- Serves 4.
