Ingredients

  • 1 fryer, cut in 8 pieces
  • 1 large green pepper, in strips
  • 1 c. mushrooms, halved
  • 1 large yellow onion, thinly sliced
  • 1/4 c. red wine
  • 2 Tbsp. oil
  • 4 large cloves garlic, smashed
  • 1 Tbsp. dried oregano ro 3 Tbsp. fresh
  • 1 Tbsp. sweet basil or 3 Tbsp. fresh
  • 1 Tbsp. dried thyme or 3 Tbsp. fresh
  • 1 qt. jar whole tomatoes

Method

  • Wash, cut and dry chicken; brown in oil.
  • Place in 3-quart casserole and add other ingredients.
  • Cook, uncovered, 1 1/2 to 2 hours at 350° or until chicken becomes loosened from bone.
  • Salt and pepper to taste.
  • Serves 4.
