Ingredients

  • 2 cups dry white wine
  • 1 cup fresh lemon juice
  • 1 cup water
  • 1 carrot, peeled and thinly sliced
  • 2 ribs celery, thinly sliced
  • 1 small onion, peeled and thinly sliced
  • 2 sprigs fresh thyme
  • 1/2 teaspoon black peppercorns
  • 1 2-to-3-pound shad, scaled and cleaned, head and tail intact

Method

  • Preheat oven to 300 degrees.
  • Combine all ingredients except shad in a steamer large enough to hold the fish.
  • The liquid should barely reach the rack.
  • If necessary, add equal proportions of wine and lemon juice until it does, but do not allow shad and liquid to meet.
  • Place the fish on the rack.
  • Cover tightly and steam for 5 hours.
  • Serve immediately.
