Ingredients
- 2 cups dry white wine
- 1 cup fresh lemon juice
- 1 cup water
- 1 carrot, peeled and thinly sliced
- 2 ribs celery, thinly sliced
- 1 small onion, peeled and thinly sliced
- 2 sprigs fresh thyme
- 1/2 teaspoon black peppercorns
- 1 2-to-3-pound shad, scaled and cleaned, head and tail intact
Method
- Preheat oven to 300 degrees.
- Combine all ingredients except shad in a steamer large enough to hold the fish.
- The liquid should barely reach the rack.
- If necessary, add equal proportions of wine and lemon juice until it does, but do not allow shad and liquid to meet.
- Place the fish on the rack.
- Cover tightly and steam for 5 hours.
- Serve immediately.
