Ingredients
- 2 pounds Mussels
- 2-13 cups Orange Marmalade
- 3 cloves Garlic, Minced
- 1 pinch Salt
- 1 pinch Pepper
Method
- Clean the mussels thoroughly under running water; throw all mussles away which stay open and not close their shell when you give them a soft knock!
- In a large pot, let the orange marmalade melt under medium-high heat.
- Then add the garlic and the mussels and salt and pepper to taste (watch out, the mussels are naturally already very salty, so be careful not to salt to much!).
- Stir well, cover with a lid, and let it cook on high heat for about 8 to 10 minutes.
- Now and then, shake the pot while the mussels cook without taking the lid off to prevent the orange marmalade from getting burned on the bottom of the pot.
- The mussels are done when they open their shells!
- The marmalade boils down to a nice thick glaze covering every single mussel.
- Serve with fresh bread and sprinkle some parsely over it, if desired.
