- 1 lb. round steak, minced
- 1 c. butter or margarine
- 1 c. all-purpose flour
- 1 medium onion, chopped
- 1 large carrot, chopped
- 3 stalks celery, chopped
- 1 can tomatoes, chopped
- 3 qt. beef stock or consomme
- 1 Tbsp. Worcestershire sauce
- salt to taste
- pepper to taste
- 1 1/2 c. light cream or half and half
Method
- Brown meat in butter; stir in flour until smooth.
- Add onion, carrot and celery; cook 10 minutes, stirring often.
- Add remaining ingredients except cream; bring to a boil.
- Simmer 1 to 3 hours. (The longer the soup cooks, the better it is.)
- Add cream during last 5 minutes of cooking.
