Ingredients

  • 1 lb. round steak, minced
  • 1 c. butter or margarine
  • 1 c. all-purpose flour
  • 1 medium onion, chopped
  • 1 large carrot, chopped
  • 3 stalks celery, chopped
  • 1 can tomatoes, chopped
  • 3 qt. beef stock or consomme
  • 1 Tbsp. Worcestershire sauce
  • salt to taste
  • pepper to taste
  • 1 1/2 c. light cream or half and half

Method

  • Brown meat in butter; stir in flour until smooth.
  • Add onion, carrot and celery; cook 10 minutes, stirring often.
  • Add remaining ingredients except cream; bring to a boil.
  • Simmer 1 to 3 hours. (The longer the soup cooks, the better it is.)
  • Add cream during last 5 minutes of cooking.
