- 1 bunch asparagus (about 12-16 ounces total), ends broken off
- 2 carrots, (about 6-8 ounces total), peeled King Sooper's 1 lb For $0.99 thru 02/09
- 1 daikon radish, (about 4-6 ounces), peeled
- 2 Tbsp. raw sunflower kernels
- 3/4 tsp. fresh lemon thyme
- 1/2 tsp. fresh lemon juice
- 1 Tbsp. white wine vinegar
- 1/2 tsp. GREY POUPON Dijon Mustard
- 3 Tbsp. extra virgin olive oil
Method
- Wash the vegetables carefully, and using a vegetable peeler, peel thin strips of each vegetable and combine in bowl.
- Toss with the sunflower seeds.
- Whisk together the remaining ingredients in a separate bowl, and then dress the salad with the mixture.
