Ingredients

  • 1/3 c. plus 1 Tbsp. shortening
  • 1 c. all-purpose flour
  • 1/2 tsp. salt
  • 2 to 3 Tbsp. cold water

Method

  • Cut shortening into flour and salt until particles are size of small peas.
  • Sprinkle in cold water, one tablespoon at a time, tossing with fork until all flour is moistened and pastry almost cleans side of bowl.
  • (One to 2 teaspoons cold water can be added if necessary.)
  • Gather pastry into a ball and roll out on floured board.
  • Roll pastry 2 inches larger than pie plate.
  • Prick bottom and sides thoroughly with fork.
  • Bake at 475° until light brown, 8 to 10 minutes, and cool.
