Ingredients

  • 3 lb. yellow squash
  • 1 large onion
  • 2 eggs, beaten
  • 1 tsp. brown sugar
  • 1/2 stick butter
  • 1 1/2 c. grated Cheddar cheese
  • 1 tsp. salt
  • 2 tsp. cornstarch
  • 1/2 large can evaporated milk

Method

  • Cut squash into 2-inch pieces.
  • Add onion and cook.
  • Drain well and mash.
  • Add brown sugar, butter, eggs, 1 cup of cheese, salt and cornstarch that has been added to the evaporated milk. Pour into flat casserole and sprinkle with remaining cheese.
  • Bake in 350° oven for 30 to 40 minutes.
