Ingredients

  • 1-2 cans shoepeg corn (drained)
  • 1 can black beans (rinse and drain very well)
  • 4 stalks celery-thinly diced
  • 1 red pepper-diced
  • 1 yellow or orange pepper-diced
  • 1 jalapeno (seeded and finely diced)
  • red onion-finely diced
  • Equal parts 1/3-1/2 C each
  • Canola oil
  • White Vinegar
  • Sugar
  • Frito Scoops

Method

  • Mix the 1st 6 ingredients (corn-jalapeno) and put in colander to drain.
  • Mix oil, vinegar and sugar together.
  • Put vegetables in bowl. Pour oil mixture over.
  • Serve with frito scoops.
