- 1-2 cans shoepeg corn (drained)
- 1 can black beans (rinse and drain very well)
- 4 stalks celery-thinly diced
- 1 red pepper-diced
- 1 yellow or orange pepper-diced
- 1 jalapeno (seeded and finely diced)
- red onion-finely diced
- Equal parts 1/3-1/2 C each
- Canola oil
- White Vinegar
- Sugar
- Frito Scoops
Method
- Mix the 1st 6 ingredients (corn-jalapeno) and put in colander to drain.
- Mix oil, vinegar and sugar together.
- Put vegetables in bowl. Pour oil mixture over.
- Serve with frito scoops.
